Homemade, Sugar-Free Whole Wheat Cinnamon Rolls-Yum Yum

Nothing beats the smell of homemade cinnamon rolls, fresh from the oven.  Absolutely heavenly!!

A few months ago I came across a recipe for sugar-free cinnamon rolls and was surprised to find they were delicious!  These cinnamon rolls use honey granules instead of sugar. 

Your famly will not notice the difference in taste.

Now for the recipe:

1 1/2 cups hot water                                      2 Tablespoons Dough Enhancer
1/3 cup oil                                                     1 teaspoon gluten
1/3 cup honey                                               4-4 1/2 cups freshly milled flour
2 teaspoons salt                                             1/2 cup ground flax seed
1 Tablespoon yeast

I get most of my wheat from Montana Milling and grind it at home.  I have a Family Grain Mill and it grinds the wheat kernels pretty quickly.

While the wheat is grinding I gather all the other ingredients.

Put the water, oil, honey and salt in the mixing bowl and turn on the mixer.

Add the Dough Enhancer, gluten and about 2 cups of flour.
Mix well and add flax seed and yeast. 
Slowly add enough flour to make a soft dough.  When the dough pulls away from the sides of the bowl it is usually ready. 

At this point start timing and run the mixer, kneading the dough, for 5-6 minutes or until dough is smooth and elastic.    
Cover the bowl and let the dough rise for about an hour or until double in size.

I prepare the filling while the dough is rising.

1 1/2 cups honey granules                                    1 Tablespoon cinnamon
Dash of nutmeg                                                    6 Tablespoons melted butter

Mix well to form a paste.

Roll the dough into a rectangle 10 x 15 inches. 

Spread the filling evenly over the dough. 

Roll up like a jelly roll. 

Cut in 1 inch slices and place in a 13 x 9 inch pan with the sides touching.  Cover and let rise until double, about 35 minutes.

Bake rolls in 350 degree oven for 25-30 minutes.  Sit back and enjoy the aroma as they bake to perfection.

When the rolls are finished baking, let them cool while you prepare the icing.  Here are 2 choices:

Cream Cheese Icing
8 ounces cream cheese, softened                                         1-2 Tablespoons honey
1 teaspoon vanilla

Whip cream cheese, honey and vanilla until smooth.

Honey Glaze
1 cup Honey granules                                   1-2 Tablespoons butter
1/2 teaspoon vanilla                                      Milk

Powder the honey granules in a blender.  Add to melted butter.  Add vanilla and enough milk to get desired consistency.  Whip until smooth

Once the rolls have cooled a bit you can spread with the frosting of your choice. 

Today I made the cream cheese icing but we prefer the honey glaze.

Hot, fresh cinnamon rolls right from your own oven-what a treat!
I usually make these up ahead of time and the hard part is keeping everyone out of them until the morning for breakfast!
